Our Story

On a cold January night in 2025, Paul Finn visited The Cave. That night, he had the good fortune of running into an old friend he hadn't seen since moving back to Chapel Hill: Lauren Bennett. As they caught up and reminisced, Paul mentioned that he had dreamt of opening a bar in the Triangle ever since he moved back to the area. Lauren shared how well her venture, Beau Catering, was doing, having recently acquired a liquor license and a budding beverage program. Without even realizing it, the seed for what would become Little Gem had been planted. Some eight months later, that seed had blossomed into a full-functioning cocktail bar and event space.
